As tomorrow is Thanksgiving, Erika and I wanted to share a couple of our favorite recipes for family feasts. If you’re still looking for last-minute ideas, here’s what we recommend:
Sweet Potato Casserole (from Erika)
Ingredients
- 2 29-oz cans of sweet potatoes or yams
- 1 15-oz can of crushed pineapple
- ½ cup brown sugar
- ½ cup sliced almonds or pecan-halves
- 2 4.5-oz packages of Plush Puffs Gourmet Marshmallows: Gingerbread Spice, Caramel Swirl or Maple Bacon (your choice)
Directions
- Preheat the oven to 350 degrees.
- Put the yams in a baking dish and cover with all of the remaining ingredients except marshmallows.
- Put in the oven and bake for 25 minutes.
- Remove from the oven and cover with the Plush Puffs Gourmet Marshmallows.
- Put the dish back in the oven for 3-5 minutes until the Plush Puffs Gourmet Marshmallows melt.
- Serve and enjoy!
Cranberry Freeze Salad (from Emily)
Ingredients
- 1 can whole berry cranberry sauce
- 1 8-oz can crushed pineapple, drained
- 1 cup sour cream
- ½ cup chopped pecans (optional)
- lettuce leaves
- pecans garnish (optional)
Directions
- Combine sauce, pineapple, sour cream and chopped pecans.
- Mix well.
- Pour into 8” square pan and freeze until firm.
- Cut into squares and serve on lettuce.
- Garnish with pecans.
